Chicken and plantains travel unneurotic successful this homey stew that's fragrant with smoked paprika, cumin and oregano. The plantains, which should beryllium somewhat yellowish with a fewer acheronian spot, soften but clasp their shape.

Serve with your favourite flatbread, crackers oregon achromatic rice.

Ingredients

Servings: 4 (makes 6 cups)

  • 1 spoon olive oil
  • 1 lb boneless, skinless chickenhearted bosom halves, trimmed of excess abdominous and chopped into 1/4-inch dice (see Notes)
  • 1 mean yellowish bulb (8 ounces), chopped into 1/4-inch dice
  • 2 ail cloves, minced oregon finely grated
  • 1 ample caller tomato, peeled and seeded if desired, and coarsely chopped
  • 1 cupful no-salt-added chickenhearted broth
  • 1/2 cupful adust achromatic wine
  • 1 spoon saccharine (dulce) smoked Spanish paprika (pimenton)
  • 1 spoon crushed cumin
  • 1 spoon dried oregano
  • 2 firm, yellowish plantains, peeled and thinly sliced
  • Fine brackish (optional)
