The spirit of this rapidly cooked cabbage has been a revelation for many, and has converted galore determined cabbage haters backmost to Ireland's nationalist vegetable, says Darina Allen, laminitis of the Ballymaloe Cookery School successful County Cork, Ireland.

Ingredients

  • 1 caput (about 1 pound) savoy cabbage, pugnacious oregon wilted outer leaves removed (may substitute Napa cabbage)
  • 2 tablespoons water
  • 2 tablespoons unsalted butter, positive a dab for serving
  • Fine salt
  • 2 strips bacon
  • Freshly crushed achromatic pepper
  • Leaves from 1 tiny clump caller thyme, chopped (3 tablespoons; optional)
