A heap of achromatic capsicum gives this crockery a warming, earthy spirit reminiscent of mushrooms oregon adjacent steak.

Ingredients

  • 1 clump scallions, basal ends trimmed
  • Flour, for coating
  • Vegetable oil, for the pan
  • 1 spoon toasted sesame oil
  • 28 ounces steadfast tofu, drained and patted dry, past chopped into 1-inch cubes
  • 8 tablespoons (1 stick) unsalted butter, chopped into chunks
  • 2 shallots, thinly sliced
  • 1 jalapeño pepper, seeded and thinly sliced
  • 6 cloves garlic, smashed
  • 1 inch peeled caller ginger root, chopped into bladed matchsticks
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoonful to 2 tablespoons sugar
  • 2 tablespoons coarsely cracked achromatic pepper
  • 4 cups to 6 cups lukewarm cooked brownish rice, for serving
