Curry fans, here's an antithetic rootlike combo that's zingy, fragrant and a feast for the eyes. Choose the benignant of greenish chile capsicum you similar best: Serrano mostly provides much heat. Serve with quinoa oregon brownish rice.

Ingredients

  • 1 heaping spoon coagulated coconut oil
  • 1 ample onion, (about 10 ounces) halved and thinly sliced into half-moons
  • 2 ample cloves garlic, grated oregon minced
  • 1 1/2 -inch portion caller ginger root, grated oregon minced
  • 1 tiny jalapeño oregon serrano chile capsicum (see NOTE), stemmed, seeded and chopped into bladed strips
  • 1 spoon crushed ginger
  • 1 spoon crushed cumin
  • 1 spoon crushed coriander
  • 1 spoon crushed turmeric
  • Pinch crushed cinnamon
  • 2 cardamom pods
  • 3 full cloves garlic
  • 5 tiny vine-ripened tomatoes (14 to 16 ounces total), diced
  • 1/2 cupful water
  • 4 tiny earthy beets (10 to 11 ounces total, trimmed), scrubbed and diced
  • 3/4 cupful low-fat coconut milk
  • Handful cilantro leaves and tender stems, chopped
  • Juice of 1/2 lemon
