The sensation of this crockery skews somewhat retro, a small spot sweet-and-sour. Using a mango that's ripe makes each the difference. From chef-cookbook writer Aliza Green: If the country astir the stem looks plump and round, and the effect has a sweet, fruity aroma and is somewhat brushed to the interaction (like an avocado), you're bully to go.
